These breakfast recipes make me happy because breakfast is my favorite meal – any time of the day! I’ve always loved breakfast, ALWAYS. I’m guessing it’s because of the ingredients, but honestly I have no idea. Maybe I should ask my parents what’s my deal. Anyways. Buttermilk Pancakes II – Allrecipes
Who doesn’t love a fluffy, buttery pancake? Seriously? I’d really like it know. This recipe comes from Allrecipes and is my absolute go-to. The only down side is you need buttermilk, meaning you typically need to plan ahead. You can, however, make buttermilk at home with milk and vinegar but store-bought buttermilk is better. A few notes. Try to bring your eggs, milk and buttermilk to room temperature before cooking – it will make for a fluffier pancake. Say 30 – 60 minutes before. Make sure to not over mix the batter, little lumps in the batter are perfectly fine. This applies to all your pancake recipes, if you over mix they will be tough. I cook on a griddle at 350 degrees. Plus they make a ton and freeze like a dream. To defrost, pop them in the microwave for a few seconds then put them in the toaster and it’s like you just made them fresh.
Breakfast Tacos by Cooking Classy
OK fine this really just turned into a massive breakfast burrito. To be honest it’s all the ingredients I would have used anyways but her picture and the word tacos just seemed so cute. It’s a helpful recipe to remind you what you want in a basic breakfast burrito. Condiments are required here. My favorites are sour cream, hot sauce and green onions. Good luck on making a taco, because it’ll be hard once you have all the ingredients in front of you. You’ll just think, I’ll make a burrito instead.
Kings Hawaiian French Toast by Kings Hawaiian Bread
This is how French toast was meant to be, on that fluffy, sweet Hawaiian bread. Seriously. I always thought french toast was missing something. Turns out it’s Hawaiian bread! The recipe itself is a basic French toast but add the bread and it’s magic. You’re welcome. I went for it and topped it with banana and strawberries. And I know, this is a horrible picture but the recipe isn’t.
Blueberry French Toast Casserole by Sally’s Baking Addiction
Sally’s baking addiction for the win – always. I made this delicious dish two days before I gave birth to my son, so lucky me, I had something when I came home. Talk about good timing! I made the casserole in the morning and let it sit all day, then made it at night. Or you can make it at night and bake it in the morning. Either way, let it sit. It’s a hearty casserole with crispy bits on top and softer, custard-like bites on the bottom. I used brioche bread because it’s the best – you should too. Oh and then those beautiful blueberries pop in your mouth. Man it’s tasty. I think it would be good with raspberries too. It would also be a wonderful dish for a special occasion, brunch, or a reward for giving birth!
Easy Cheesy Breakfast Casserole by Gimme Some Oven
This is a good, basic potato casserole with a ton of possibilities. So I say treat it like a baked potato. It’s a good base but needs toppings. Sour cream, green onions, hot sauce, bacon, you name it. Think how much fun this would be at a brunch with a toppings bar! Now let’s get to the notes. Your frozen hash browns need to be thawed. I, of course, didn’t look ahead so while I was getting everything else ready and cooking the sausage and vegetables I put the hash browns in the microwave on defrost. Easy peasy. Like normal, I only did 1/4 of the onion because God forbid there is too much onion for my toddler to detect. I also think you could add more stuff in the casserole, more vegetables, beans, adobe sauce, etc…Happy topping!
