So to make life easier for everyone I thought I’d gather up the chicken dinner recipes below – including my reviews and any tweaks I made. Also, don’t judge me for my love of chicken pot pie. Enjoy!

Chicken Pot Pie II from Allrecipes
I love chicken pot pie and this recipe is my absolute favorite! It’s the chicken pot pie you’ve been searching for. It’s got that rich comforting feeling. I mean, it’s comfort food at it’s finest! And yes, it does take a while, that’s just chicken pot pie for you. For this recipe I use an 8×8 pan
Here are my tips. To make life easier, I use rotisserie chicken and frozen vegetables. For the chicken I use two cups. The vegetable mix I typically use are corn, peas, carrots and green beans mix. But let’s be honest, it’s whatever is in the fridge sometimes. I also like to add par-boiled potatoes, around five, but it’s completely optional. However you must add 1/2 teaspoon poultry seasoning to the recipe, it’s that one ingredient you need to make this pot pie sing. I ended up adding 1 teaspoon salt total, the recipe states only 1/2 teaspoon.
Of course, homemade crust is always better, but I typically use the refrigerated kind. I like Marie Callendar’s. Make sure to cut holes in the crust and do an egg wash. It is easier to use the refrigerated pie crust, but I’ve also used the frozen pie crust that’s already in the pie pan. Honestly, I just forget to get the fridge version. But all you need to do is defrost it for about twenty minutes and prepare yourself for a more rustic look. I just broke up the pie crust and pieced most of it on top of the filling. Looks fine, tastes just as good. Enjoy!
One Skillet Chicken with Garlicky Mushroom Cream Sauce by Little Spice Jar
This recipe is extremely tasty! I absolutely loved it and cannot wait to make it again. A few comments though. The name implies that it’s all cooked in one skillet, but the recipe wants you to finish the chicken in the oven. Don’t. Just cook the chicken in the skillet and keep following the directions. I used chicken thighs.
Don’t skimp on the garlic, it’s around 4-6 cloves for a tablespoon. For some of you that might seem like a lot, but garlic is your friend. So put it all in. Ooo that’s catchy.
At one point she tells you to combine a few items into the chicken stock and it seems weird. Well do it because if you don’t you’ll be looking at the other ingredients wondering when they go in because she told you to put the chicken stock in and not the chicken stock mixture.
Make sure to serve it with rice or something to soak up the sauce!
Mom’s Fabulous Chicken Pot Pie with Biscuit Crust from Allrecipes
I followed the recipe as is but I do have a tip. Make sure to cut the biscuits in half, then cut them into pieces. This will help the biscuits cook faster and evenly. Also, should you have some unwilling little eaters in your house, take the biscuits off and use them as bribery to eat the rest of the dish. Whatever works folks!

I actually didn’t change a thing, it’s great! We heat the tortilla on the stove top and bring on the condiments! Homemade guacamole, sour cream and hot sauce.
Chicken, Spinach and Noodle Casserole by Real Simple
I actually got this recipe out of a Real Simple magazine years ago. It’s a warm, homey casserole that makes me very happy. Probably because it reminds me of my mom’s tuna noodle casserole growing up! Fair warning here this casserole does take a while to make and there is some skill needed because you make a roux. As with a lot of casseroles, I like to use rotisserie chicken to save time.
