I’ve been cooking these forever. I’m talking before kids forever. It’s just a solid, good pumpkin bar with that little tangy-creaminess from the cream cheese. They were always a hit at work! Plus, bars are so easy to share and bring to potlucks.
One Bowl Pumpkin Banana Muffins

These are great kid muffins to help bake and to eat. If you’ll notice above, I leave out half of the chocolate chips for my son who is 1 1/2 years old. But of course the 5 1/2 year old needs chocolate chips. These muffins aren’t overly pumpkin flavored because of the banana. So if someone in your family is on the fence about pumpkin, start with these.

This coffee cake is rich, moist and delicious. I will say it can end up more on the sweet side. So if that doesn’t appeal to you, omit the icing drizzle and tone down the crumb topping. But I go all in because this soft and fluffy coffee cake is the absolute best with a nice hot cup of coffee. If you know tomorrow is going to be crisp and cold. You’ll want this to wake up to.
